The list of new openings in Sydney seems endless. From a Pyrmont bar that has undergone a facelift to a vintage whisky bar in a heritage building, to an underground watering hole serving lobster rolls – the newbies are diverse. With a plethora of new openings, we’ve taken the pleasure of chipping away at those that have set the standard in recent times with the following breakdown.

Poor Toms Gin Distillery in Marrickville, has been the source of the state´s best homemade gin since 2015. It´s been so unbelievably well received that they amassed more than $25000 in proceeds through crowdfunding to make the brew. After more than three years of working hard to perfect their splendid blend, owners Jesse Kennedy and Griffin Blumer have opened their doors at Chalder Avenue to the public. Their custom built bar with its marble top and furniture put -together from scratch create a nice inviting atmosphere for a casual evening. In terms of drinks, the selection of course centers around Poor Toms Gin and each cocktail served up here has its gin fix. As for edibles, the bar has joined up with Pizza Madre during the week and on Sunday some sausage sizzles are served at the Gin Hall.

Named after the 18th century namesake who would go on to become King William IV, this cozy vintage tavern, offers literally an otherworldly feel. The very English atmosphere could have one believe that Charles Dickens penned a few chapters of a novel here, over some pork pie and ale. But in reality, its theme is quite ambitious and so is their menu to boot. With over 500 spirits to choose from diners are treated to local as well as imported wines and some exciting cocktails. The food is a salute to the offerings in Northern England, where the tavern´s owner grew up. We recommend the fish finger sandwich if you are a first timer.
